Ice machines work by pumping water into an ice mold known as an evaporator grid, and the water gradually freezes to form ice cubes. During this process, water flows through a carbon filter which traps organics and removes chlorine. This process creates ideal conditions for bacteria growth. Within a few weeks of installation, the water exiting the filter can contain more bacteria than the water entering the filter.
This, along with the biofilm that forms on the spillway leading to the evaporator grid and the bacteria that grows in the ice bin, imparts a taste and odor to the ice.
